Carne Asada Tacos
This simple recipe is so tasty for making Carne asada street tacos! You can keep it simple or dress it up a bit with a spread. We enjoyed them for two nights, taco Tuesday and taco Wednesday, trying both versions! 😊
Ingredients:
1-2 lbs BRB carne asada or skirt steak
2 tablespoons olive oil
1 1/2 cups orange juice
1/2 cup fresh squeezed lime juice
1 - 2 tablespoons Goya Adobo seasoning
fresh limes
1 white sweet onion
2 avocados
1 cup of cilantro
1 clove of garlic
1/2 tsp pepper
1/2 tsp salt, a pinch of salt
corn or flour tortillas
Directions:
To make the marinade: Thaw carne asada or skirt steak. Mix orange juice, lime juice, olive oil and Goya Adobo seasoning, 1/2 teaspoon salt and pepper into a medium size bowl and stir to mix well.
Put beef into a Ziploc bag and pour marinade over the beef into the bag. Seal the bag so very little air is inside and massage the marinade around the beef. Put in fridge and let marinade for 6-12 hours. When ready to prepare, bring beef out of fridge and let it get to room temperature.
To prepare the toppings: Dice white onion into small pieces, put them in a colander and run cold water over them for a minute. Set the onions aside for the remaining water to drain for a few minutes and then put the onions in a bowl.
Chop cilantro into very small pieces, put in a bowl and set aside.
Cut 1-2 fresh limes into wedges, put in a bowl and set aside.
To grill the meat: Once meat is room temperature, turn grill on and get it to 500°. Place meat on grill and sear for 1 to 2 minutes (depending on thickness). Turn meat over using tongs and sear for another 1 to 2 minutes. Next, greatly reduce heat of the grill. (You can shut off one or two burners, turn others to low.) Move meat to coolest part of the grill and cook via indirect heat until meat reaches desired level of doneness.
Use a meat thermometer to pinpoint level of doneness. Remove meat when it is 5° under desired temperature. Cover with foil and rest 5 minutes. Slice against the grain into thin slices then chop into bite size pieces.
To prepare tacos: Warm tortillas using a pan on low heat on the stovetop. Once warm, remove tortillas and fill them with sliced beef. Sprinkle onions and cilantro over the top of the beef and finish by squeezing fresh lime juice over the top! Delicious!
To “dress up” carne asada tacos: Mix or blend 2 peeled and pitted avocados, 1 clove of minced garlic, 1/2 cup cilantro, 1/4 cup lime juice, 1/2 teaspoon of Goya Adobo seasoning and pinch of salt to make a delicious avocado spread. Smooth avocado spread onto warmed tortilla and then fill with carne asada, onions and cilantro. Squeeze fresh lime juice over the top and enjoy!
